- 2 tablespoons (30g) light brown sugar
- 2 1/2 teaspoons (15g) honey, divided
- 1/8 teaspoon kosher salt
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground cardamom (optional)
- 1 thick slice (2-inch) of brioche, challah, milk bread, or soft white bread
- 1/4 cup (113g) Greek-style yogurt
- 1/4 teaspoon vanilla bean paste
- Fresh berries, for serving
Instructions
- Prepare the Honey-Butter: Preheat oven to 325°F and line a baking sheet with parchment. In a bowl, mix butter, brown sugar, 1 1/2 teaspoons honey, salt, cinnamon, and cardamom (if using).
- Coat the Bread: Spread a thin layer of the mixture on all sides of the bread. Place the bread on the prepared baking sheet.
- Bake: Bake for 12-16 minutes until lightly golden. Flip and bake for another 5-7 minutes until evenly golden and crisp.
- Cool: Let the toast rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool for another 10 minutes.
- Prepare the Topping: In a small bowl, whisk yogurt and vanilla bean paste until smooth. Stir in the remaining 1 teaspoon of honey without fully incorporating it to create a swirl.
- Assemble: Place the toast on a plate, dollop yogurt on top, and garnish with fresh berries. Drizzle with additional honey if desired. Serve immediately.
